Job Description:
As Chocolatier Chef de Partie at Waldorf Astoria Dubai International Financial Centre, will supervise staff and ensure high levels of food preparation to deliver an excellent Guest and Member experience. Specifically, you will be responsible for performing the following tasks to the highest standards:
Job Responsibilities:
- Prepare all mis-en-place for all relevant menus
- Assist in positive outcomes from guest queries in a timely and efficient manner
- Chocolate décor for ala carte and buffets
- Chocolate hand tempering in small and big batches
- Cocoa butter spraying and tempering
- Making piping ganache and dipped ganache slabs
- Contribute to controlling costs, improving gross profit margins
- Assist Executive Pastry Chef and Junior Sous Chef in the training of all staff in compliance of company procedures
- Ensure all food preparation present high quality food
- Supervise staff
- Keep all working areas clean and tidy and ensure no cross contamination
Job Requirements:
- Excellent communication skills
- Intermediate Food Hygiene
- Knowledge of current food trends
- Educational background in Culinary Arts
- Achieved Basic Food Hygiene Certificate
- Positive attitude
- Ability to work under pressure
- Strong Chocolatier expertise
- A minimum of 1 years of previous experience as a Chef de Partie or strong experience as a Demi Chef de Partie
- A current, valid, and relevant trade commercial cookery qualification (proof may be required)
- Strong coaching and leadership skills
- Ability to work on own or in teams
- Locally available for a Food Trial
