Job Description:

As Sous Chef you will maintain operation and planning for all sections in the shift in terms of manpower and work flow. Liable for future planning of the section in terms of manpower and equipment, following up day to day operations of food, assigned and monitor all approved tasks. You will supervise that the section is equally manned in all shifts to ensure meals are prepared as per production plan and within HACCP guidelines.

Job Responsibilities:

  • To give proper handover of equipment’s from shift to shift.
  • Develop full knowledge of JD Edwards Enterprise one System, Bin conveyor and GN (Gastronomic) tray management system and centralized cooking control and monitoring system to give a proper training to the staff.
  • Support the Line Manager to forecast the man minutes and productivity of the sections for upcoming cycles.
  • To conduct weekly Yield test to control food cost.
  • Maintain and monitor high standards of cooking and presentation for all the Amiri and VVIP flight preparation (Seasoning, portion size, appearance).
  • Check the quality of raw materials being received in the kitchen and highlight any quality issued to purchasing for corrective action.

Job Requirements:

  • Good Knowledge about food and beverages
  • Worked as a Junior Sous Chef for minimum of 1 year
  • Planning and supervisory skills
  • Ability to effectively supervise and train a large diverse work staff and experience in managing in a high-pressure environment
  • Basic Food hygiene & HACCP (Hazard Analysis Critical Control Point) skills
  • Fluent in reading, writing, speaking English
  • Must be keenly aware of new trends and directions in the fine dining service industry
